If the engine itself is running fine then it sounds to me like you have an impeller problem.

Dean - take a look at these pictures, this should give you a good idea of what you need to do. You can order this sound insulation in sheets online.

Swap out all of your spark plugs with a high end plug. I also switched to high octane gas. Try putting in a gas conditioner too, i got one at O'Riley's for $10. Also, does the boat behave the same after it is warm, I find that my boat runs much better after 5-10 min. Fuel filter is a must as well.

Hi - I am having the same problem with my 2002 Utopia 205 boat. It was running fine the first day of the summer and then the second day on the way back in it started shutting off. Cranks right back up - start going - shuts off again. It will idle OK and starts right up - but just want run without shutting off intermittently. Did you have any luck with your attempts to fix your boat?
