Yeah, and put the bottle jack on the trailer. That's what I did.

You could use a hydraulic or screw jack. Use some scrap wood between the plate of the jack and the boat bottom.

It sounds like it's running lean from an air leak. Whoever rebuilt your carbs must have caused an air leak.
