I use my 150 the same way you are planing and its just the right amont of power. I switched from a sportster LE DI with 130HP and what a difference. For resale the 255 will always have a bigger apeal. Pulling tubers from a dead stop is where you will see the biggest benifit.

I have just put a deposit on a 2011 speedster 150. Have wife and 2 children, 10, 12. Looking to pull tubes etc. I went to another dealer to just check on price and get another dealer perspective. He basically told me he would not sell the 150 to me because the engine is too small for the boat and I would be unhappy. Said it would barely pull tube with two kids and never be able to accommodate 4 adults. Sea doo built engine too small for boat. He wants me to move up to 255hp or to a bigger boat. Is this just a sales guy trying to up sell me or is there merit to what he is saying. Going to use in salt water in bays on cape and also a couple lakes as well. Any advice would be appreciated. Thanks!
Well, the sales guy sounds like he knows what he i talking about. I have owned the Sportster 4-tec with the 155hp engine, which was okay, and I could wakeboard behind it with one adult pulling me, but once I add another adult, I had to drag a little bit before I could get up at full throttle. I am about 190lbs, to give you perspective.
I sold the boat and bought a Speedster 150 with the 215 hp, and with two adults, it will yank me out of the water at half throttle no problem. So, what the sales guy was telling you was pretty much right on point. What he should offer to do for you is take both on a test drive with the boat fully loaded how you would ride with it. You could also consider the Challenger 180 with the 255hp engine, which seats 8. I suggest a test drive though. Any reputable dealer will let you do this, no questions asked. Good luck.
