I get a lot of spray in my face when I am tubing. I know how to adjust the plate. what I do not know is which way to adjust and what does it do.

To be honest this is pretty common in our boats, I would just recommend a longer tow rope. You could also look into trim tabs if they are in your budget.

aren't trim tabs the same as adjusting the ride plate down? If I adjust it down will it help?

You can give it a shot, but I just do not think it will be a noticeable difference.

I recommend the Place Diverter. Not cheap but well worth the money for complete control on how the boat handles.

I did mine and it planes much quicker now. To adjust it, first loosen the 2 torx screws that hold front of plate. Now loosen the locknuts above spacers at the back, then loosen screws that go into housing.....you may need to heat housing for this. Now pull down on back of ride plate to see if loose enough, then tighten locknuts down tight. Should be able to drop it about an inch. Tighten up torx screws n yer dun.

Also add to your tow rope if you're using only 60'.
