When trailering your boat do you use the tonneau and bow cover or do you use a mooring cover? I store my boat in the garage and trailer to a lake about 20 miles away. I have been putting on the tonneau and bow cover, but should I?

I wouldn't recommend it with those covers, they are not designed for towing - it will rip the snaps right off. There are covers made that are suitable for towing, such as the ones made by Poppy Company.
On another note I also wouldn't recommend towing with your carpet in either if you don't have a proper cover.
We tow with no cover and no carpet - that seemed to work best on our 180 Challenger.

I have a trailering cover for mine, but I usually just take it off and also take out the carpets to tow it.

As long as I am on the topic, did anybody get the "reusable shrink wrap cover". It's a big what thing with velcro straps. Is it useful?

Our 210 Wake didn't come with one. We just got the bow and tonneau covers.
I imagine it would be useful when storing the boat during the winter.
