What are we supposed to be seeing as the benefit there? Going too fast for any kind of docking maneuvers AFAIC.

The guy driving the boat was just learning so you see he is over steering and giving it too much throttle on his approach to the dock. When docking-mode is engaged, it limits the maximum number of RPMs so that someone doesn't panic and gun it into the dock. Basically it assisting with your throttle speed to give you a better approach to the dock. Not really necessary for seasoned jet boaters but it comes in handy for a first time jet boater.
