I just bought a used 2001 challenger(only 100 hrs on it) & the engine cuts out when I increase the throttle. I assume the previous owner let it sit for awhile. My first reaction is to get rid of the old gas, change the fuel filter & spark plugs & run new premium gas w/ marine Sta-Bil additive. Should I drain the oil as well? If so, what kind of oil works best? If anyone has additional advise please feel free to post it. Thanks!

I would say you are on the right track, if it has sat for while the gas is probably going bad and causing it to choke out a bit. I would recommend changing the oil out too as you mentioned, it could only help the situation. Keep us posted if things improve after you take these steps. Welcome to the site!

Try the spark plugs. Do one thing at a time and see what fixes the problem. I would start with the plugs and go from there, as the plugs would be the easiest fix.
