So I noticed that my boat is cavitating badly. I checked the driveshaft and sure enough, I can move the rubber boot back and forth on the shaft causing water to squirt into the hull. The carbon ring seems to be tight against the shaft, but not against the boot. They don't seem to be aligned together. Do I just need to replace the rubber boot or does the carbon ring need to be replaced too?

You may have to look @ a few items.
First, ensure you have correctly filled the PTO with enough grease to ensure a good fit between the carbon ring and shaft, which it seems like you may have already done.
Second, the boot should not be easy to compress. If you can easily compress the boot with your hand, then the boot may be worn and is in need of replacement.
Last, inspect the wear against the carbon ring. You may need to realign the motor if the circle pattern on the carbon ring created by the stainless compression stop appears asymmetric.
