A would say, whose minimum number of people is larger than the number you will take onboard. I have am 8 seat Challenger 180 and find that when friends join, 6 is about as many people as I want onboard. This isn't do to being cramped, but to friends bringing additional coolers, snacks, etc. There is only so much storage space and things tend to end up sitting on the deck and getting in the way of moving around. And of course your safety equipment is going to be taking up space.
If you are going to be wakeboarding, then definitely move up to the wake models. Again, my challenger doesn't produce the wake that boarders are looking for. Plus the racks will move the boards up and out of the way. Pulling a tube with me 180 SE is just fine, however, with a 2 person tube.
Also, where will you be boating? In the Gulf? I remember the waters being fairly placid around Marco (went there often for vacations), so a smaller boat will be fine. But the bigger the boat the smoother the ride, I am told.

1) easily towed by my 4Runner
2) right size for the 3-5 people usually on board
